山辺特有の火山灰質の黒ボク土が主体です。ミネラル豊富で水はけが良く、冷涼な気候とあいまって、高い酸度と繊細な香りを備えたワインを生み出しています。

Farming

Akayu, Nanyō, Yamagata. Trellised Bailey A and vinifera varieties alongside pergola-trained table grapes such as Delaware. From the 2021 vintage, all fruit is 100% Yamagata-grown.

WINEMAKING

Philosophy

All wines use natural fermentation with wild yeast, keeping temperature control minimal. Malolactic fermentation also proceeds naturally in barrel, holding to an approach that avoids artificial intervention.

BACKGROUND

Joined an apparel maker, then worked 28 years in grape growing and winemaking from 1990. In 2018 he founded Global Agrinet in Akayu, Nanyō, Yamagata, obtaining a winemaking license in September 2019 and opening Yellow Magic Winery.
