PHILOSOPHY

A consistent philosophy of “providing what we ourselves are satisfied with, earning an income that fits our life, and finding the greatest happiness we can.” The name Noraku (農楽) carries layers of meaning: “enjoying farming with bends and swings,” “wild fieldwork,” and “pursuing our own ideals without belonging to any particular school.” Rather than grape variety, we prioritize the character of place and people—aiming to create wines best enjoyed alongside the food culture and landscape of Hakodate and southern Hokkaido.

「自分たちの納得いくものを提供し、身の丈にあった収入と、最大限の幸せを感じられること」が一貫した哲学。農楽(のら)には「曲がって、振って、農を楽しむ」「野良仕事」「どこにも属さず自分たちの理想を追い続ける」という意味が込められている。品種よりも場所と人の個性を重視し、函館・道南の風土・食文化とセットで楽しんでもらうことを目指す。

仁木地域特有の火山性土壌で、黒ボク層が厚く形成されています。ミネラル豊かで水はけが良く、冷涼地での複雑な風味醸成に最適です。

VITICULTURE

Farming

The estate vineyard in Hokuto uses no synthetic pesticides, chemical fertilizers, or herbicides. Grapes receive organically-certified treatments (inorganic copper, microbial agents) only when necessary; vegetables and fruit trees are entirely pesticide-free. Rather than adhering to a single method, management is adapted to each field and crop.

WINEMAKING

Philosophy

Wild-yeast fermentation, unfiltered, with low or no added sulfur as the baseline — but the method (whether to destem, fermentation temperature, which varieties go into which cuvée, what kind of extraction) is adapted to the condition of the grapes. Blending before bottling is avoided; the aim is to settle on a single cuvée as early as possible.

BACKGROUND

Born in Muroran, Hokkaido. Owing to his father's transfers, he grew up in Chiba from elementary through high school. While preparing for university exams, he grew interested in wine after reading about it in a library. He went to France and studied at the enology school in Beaune, Burgundy. Later, during three years at Lumière in Yamanashi, he encountered vin nature. He moved to the Fumizuki district of Hokuto, Hokkaido, and founded Noraku-Gura, making wine from 5 ha of grapes grown without synthetic pesticides or fertilizers and fermented with wild yeast.
