PHILOSOPHY
A domain winery aiming for wines of deep, earthy richness. Using only estate-grown grapes from their own vineyard at the foot of Mt. Zao in Kaminoyama.
「地味豊かなワインづくりを目指す」ドメーヌワイナリー。蔵王山麓かみのやまの自社農園で育てたぶどうのみを使用する一貫した農場型醸造。
VITICULTURE
Farming
Cultivation without herbicides, respecting natural cycles. Dialogue with the vines is valued, with a focus on activating soil microorganisms.

Philosophy
Mainly natural fermentation with wild yeast, keeping temperature control minimal. Malolactic fermentation is also left to nature, drawing out the wine's character.
